Choc / Mint Cheese Cake

1 tub Ricota Cheese

1 pck Ginger Biscuits ( GingerNut)

Some butter

1 bar dark chocolate

1 pack after 8 or other nice mint choc

small ( 120 ml ish ) tub of whipping cream

2tbl coco

 

Make the base.

Melt the choc

Whip cream to peaks

Mix with the cool  melted choc

Add the coco

Mix  Ricota & sugar

Mix cream mix & ricota mix

Add to base  in tin

Decorate with after 8 ‘s

Fridge for a minimum of 30 mins, longer the better.
